Tasting Notes

Nose – An earthy note layered with dried fruits and a hint of vanilla.
Palate – Rich and syrupy, with notes of fig, milk chocolate, and caramelized sugar.
Finish – Long, oaky finish with notes of tobacco and light citrus.

Food Pairing – Peppercorn-Crusted Steak

When Katie and I were trying to figure out what food pairing to choose for this pour, we kept going back and forth on sweet or savory. This is one of those pours that could work with dessert, but ultimately we went with savory because the earthy notes and the long, oaky finish felt like a better match for something with a little more weight. Peppercorn-crusted steak brings that balance through its salt, pepper heat, and seared crust, which play really well with the bourbon’s deeper fig, chocolate, and oak notes.

Nav and Katie’s Thoughts

For the Advent Calendar, I wanted to highlight a bourbon and a rye from the same company at similar proof points, and Rare Character felt like the perfect fit. For Day 5, we went with their Limited Release 2025 Batch 1 Bourbon. This was our first time diving into one of their limited blends, and we were both surprised by how complex and rich the pour was while still being really approachable. It was the kind of pour that made us curious about what else Rare Character is doing, and we’re excited to see how the rye stacks up next.
