Food Pairing – Grilled Peaches with Pistachio Ice Cream

  • For the pairing, we went with grilled peaches and pistachio ice cream to lean into the apricot, citrus, and herbal notes without overpowering the proof. The caramelized peaches really highlight the fruit on the palate, and the pistachio pulls in those earthy, herbal notes from the nose while adding a creamy balance to that 121 proof.

  • I grabbed this during a random OHLQ drop in late 2025. My brother and I stood in line together, and when it was my turn, choosing the Willett just felt right — I didn’t have one, and it was time. At $399.99, it’s one of the more special bottles in my collection. Not a daily pour, but one I’ll open with the right people and the right moment.
