Tasting Notes

  • Nose – Strawberry, Citrus, Herbal.

  • Palate – Maple Syrup, Toffee, Rye Spice.

  • Finish – Medium sweet finish with notes of vanilla and honey.

Food Pairing – Chicken & Waffles with Hot Honey

  • The strawberry and maple syrup notes in this pour immediately made us think of breakfast. But with the sweetness on the finish, we figured a savory spin would work best — so we came up with chicken and waffles with hot honey. The maple and toffee flavors line up perfectly with the waffle, the rye spice cuts through the crispy fried chicken, and the vanilla-honey finish ties in beautifully with that hot honey drizzle.

Nav and Katie’s Thoughts

  • Going into Day 8, we weren’t totally sure what to expect from 13th Colony Cask Strength. It’s a distillery I haven’t explored much, but I’ve heard a lot of good things. Coming in at 120 proof, this pour didn’t drink like it — Katie and I both agreed it was surprisingly approachable, especially for anyone who enjoys a sweeter bourbon. Overall, we really liked it, and it definitely convinced us to dig deeper into what 13th Colony is putting out.
