Tasting Notes

  • Nose – Honey, stone fruit, and a light mint note.

  • Palate – Allspice and cinnamon, layered with brown sugar sweetness.

  • Finish – Short and slightly bitter, with oak and leather notes.

Food Pairing – Apple Cinnamon Roll

  • This pairing came together pretty easily. With all the baking spice and brown sugar in the pour, an apple cinnamon roll just made sense. The cinnamon lined up naturally with the palate, and the sweetness from the apple and icing helped take the edge off the bitter oak and leather on the finish.

Nav and Katie’s Thoughts

  • My Penelope collection keeps growing because they just keep putting out great bottles. Whether it’s the Cooper Series or the Estate Collection, they’ve been on a really solid run. Omega fits right in. Katie and I both liked how approachable it was for the proof, and how the sweetness and spice stayed balanced without the finish hanging on. I can’t wait to see what they do next.
